Abstract: Paper samples damaged from the so-called foxing effect were supplied by the Endo Paper Restoring Atelier and National Palace Museum, Taipei, Republic of China. The oligosaccharides and the amino acids were extracted with a 10% aqueous ammonia solution from the foxed area in the samples. Thin layer chromatography of the deionized extracted solutions shows the presence of cello-oligosaccharides. Amino acids in the extractives were determined by high-performance liquid chromatography. Some amino acids were found in high concentrations. It is known that the reaction of amino groups with the hydroxyl groups of sugars ultimately results in the formation of brown pigments (Maillard reaction). So, foxing may take place through this reaction.
